Burmese Salads - Tenderly Tossed by Golden Hands

One of my many favorite places to eat in Rangoon, Burma is at an excellent Burmese fresh salad bar on the street right next to Sule Pagoda. It opens in the evenings as the parking spaces empty, spilling off the sidewalk and over the street.

This place is preeminent in Burma for the best hand-tossed rice salad in Rangoon and probably the world. It is the Golden Hand Tossed Salad Bar.

Sesame Street

Low plastic tables and stools filled with contented customers are out in the street. At the far edge of the sidewalk are lined up a integrate tables. On these tables jars of distinct ingredients are located on a shelf. Behind the table, laughing and chatting, lovely Burmese ladies with long delicate fingers are mixing your salad up to order.

I pull up a tiny stool, with my knees nearby my ears I have a look at the menu on the low table. Pickled Tea Salad, Pickled Rice Salad, Pickled Ginger Salad...I don't even bother reading any more, I know what I want. A young lad with a longyi pulled up and tucked nearby in back comes bouncing up and I ask for rice salad.

Friendly Burmese faces are all nearby me smiling happily that a foreigner is enjoying their favorite food with them. I am trying to get a good look at what is going on behind the bottles of crispy-fried garlic, turmeric-garlic oil, sliced onions, chopped coriander, sliced tomatoes, Msg, salt, bean powder, sesame seeds, peanuts and a collection of sliced vegetables. Slender fingers are dipping quickly in and out of the jars, sometimes hovering for half a second before changing direction, reminding me of a hummingbird you only catch a glimpse of when least expected.

And when all the ingredients are all gathered into one place the light fingers start mixing and turning, tossing and sometimes squeezing very lightly until the flavors and textures mix, mingle and explode into an unsurpassed flavor combination.

Suddenly there is a small bowl on the table in front of me with a tiny spoon poked into one side. I am about to join the tea-party. My saliva enzymes are already well primed and I dig in.

Just as I remembered it and more.

Completely unforgettable. With the golden stupa of Sule Pagoda shining out in the background and my mouth full of personally-touched rice salad, I am content.

From the table next to me a middle aged, respectful-looking firm man leans over to me to ask me where I am from. When I reply America, he is happy and welcomes me to Myanmar. I tell him that I have been dreaming about this salad since I was last in Myanmar. He tells me

"The underground lies in the fingers of the chef."

When I first tried Burmese salads I was simply taken with the freshness and the flavor of them. As I learned more about how wholesome original diets are I began to perceive how sophisticated these salads are. Salads from all over Myanmar consist of whether sesame seeds or peanuts, both of which are a good protein complement for rice. They also consist of high amounts of good ability fat and calcium. Infusing oil (usually peanut oil) with turmeric and garlic and having it on hand to use in the dressings, adds great anti-oxidants and anti-microbial powers to the salads. Some salads consist of tiny, pink, dried shrimp, which are very high in protein and nutrients needed for growth and reproduction.

The Burmese only use the freshest of ingredients and toss them lightly together at the last potential small with the quick touch of the chef. The finale is the flourish of the hand as the salad is laid down before you.

And all you have to do is enjoy it.

It was not long after I'd made the lifestyle change, when I found myself in the city one day in between appointments. I was hungry and had this idea of sitting somewhere quiet, having a nice meal and doing a bit of nothing before my next appointment.


I noticed a mild anxiety rising within me about where I would find such a place. I seriously did not expect to find a fast food outlet that served low-calorie vegetarian recipes. Then I believed that even if I did find one the prices would not be what I could afford.

I wanted low calorie vegetarian fast food on a allocation vegetarian meals and either it was going to cost me an arm and a leg. Vegetarian meals back then (about ten years ago) were noticeably more expensive then meat-based meals.

Anyway, as I walked along a tree-lined street that autumn day not terribly definite about my chances, I noticed a restaurant that I had passed many times previously. For some reason, I looked in and saw a large menu displayed on a stand by the door. I couldn't help but gawk the menu not unmistakably expecting to find whatever that would satisfy my needs, i.e. A low-calorie, low-cost, vegetarian lunch.

Well, blow me down! Was I in for a surprise! On the menu was a lentil burger for .99 and for an extra .00 you could have potato wedges served with sour cream. Naturally I passed on the wedges, but the burger screamed, "Eat me".

A smiling waitress greeted me, offered me a choice of tables and proceeded to take my order.

To cut a long story short, it was a meal I wholly enjoyed, delighted at my find and especially delighted upon realizing that it was something I could unmistakably make myself. And because good things are meant to be shared, here is the recipe! Enjoy!

Lentil Burger

Low-fat pan bread, toastedYellow/red lentils (pre-cooked with garlic, onion, ginger and some coconut milk)Fresh spinach or lettuceTomato slicesSesame seedsOlive oilEggplant slices (optional) (Precooked in olive oil and some vinegar)Salt and pepper to taste

Spread some olive oil over the bread. Layer with the greens, followed by the eggplant and tomato slices. Spread the cooked lentils over. (Use as much as you like as long as you can cover and hold your burger!). Sprinkle the sesame seeds over and add salt and pepper as required.

When you are seeing for supplies for this costume it can be easy, as you should be able to find what you need in most fabric stores. To originate the nose, you will need some large fabric balls a thread and a needle, to replicate the cute nose that Elmo has. To unblemished the look of the eyes you will need to sew or glue the black circles, that can be made up of black felt or black material and place it to the town of both of the white balls. The next part you will need to put the body together. This part of the body is quite easy as there isn't a lot of sewing that is involved. All you need to do is put red sweatpants, sweatshirt and socks and the hat and place it on the child and adjust it to the child so that it fits properly. Finally, you will need to paint the face of the child red, it will probably work great if you can get the same paint color as the the sweatshirt. As you are painting the child make sure that the paint is not toxic, and make sure that the kid doesn't touch their face as it will leave blotches all over the face. You can also for a final touch add some black face paint to the area of the mouth to show your child smile like. Creating this Elmo costume, can be quite easy and have little cost to it. If you don't like the idea of the pants and shirt look you could also buy the lowest half of the costume at any costume store or online as well. Halloween shouldn't be a stressful or entertaining time of year as it should be a fun and enjoyable time for all the family that is involved.
